COMPARING WHEY RAW MATERIALS
WPC 80 or WPI 90? Your product determines which whey is the right choice.
A high protein content is important, but not sufficient for development. Compare raw material quality, application, taste, and specifications in the context of your product goal.
THE ABBREVIATIONS
WPC and WPI: What do these terms mean?
WPC stands for Whey Protein Concentrate. WPI stands for Whey Protein Isolate. In product development, WPC grades with around 80 percent protein and isolates with at least approximately 90 percent protein are common. The decisive factors remain the specification and the reference basis stated therein.
WPC 80 and WPI 90 refer to raw material grades. It does not follow that a finished flavored mixture automatically contains 80 or 90 percent protein, respectively. The total composition determines this.

RAW MATERIAL SPECTRUM
The whey varieties for your development.
Schneider Solutions works with four dairies. The table describes the potential procurement range – this is not a real-time inventory list.
| Raw material | Classification | What is being checked |
|---|---|---|
| WPC 80 Instant | Instantized concentrate quality | Specification, instantization, formulation behavior and taste |
| WPC 80 Regular | Concentrate quality without instant properties | Processing and behavior in the planned mixture |
| WPI 90 Instant | Instantized isolate quality | Specification and behavior in the desired application |
| WPI 90 Regular | Regular isolate quality | Suitability for processing, preparation and overall formulation |
| Goat WPC 60–80% | Goat whey concentrate in various qualities | Protein content, raw material profile, taste and procurement |
Appropriate quality, available quantity, and delivery scheduling will be coordinated for your order.
THE APPLICATION DECIDES
Instant or regular is not a general question of quality.
With instant whey, the raw material formulation is optimized for favorable wetting and dispersion behavior. One possible measure is treatment with lecithin; which components and processes are used for a specific raw material can be found in its documentation.
For your shake, however, the finished mixture is the decisive factor. Flavors, other ingredients, dosage, and preparation must also be considered. "Regular" is by no means automatically the worse choice.
SAME QUESTIONS, BETTER DECISION
A commodity comparison begins with the same criteria.
A similar short designation is not yet a complete product specification.
| Question regarding the raw material | What it clarifies for development |
|---|---|
| How is the protein content stated? | Whether values are compared on the same reference basis |
| Which other ingredients are included? | What is included in the total list of ingredients |
| What information is provided regarding lactose and fat? | How the quality matches the desired characteristics |
| How does the raw material behave during preparation? | Which patterns and tests are appropriate |
| What sensory properties does it possess? | How aroma, sweetness, and mouthfeel are balanced |
| What quantity is required and under what conditions? | How the project is planned in terms of budget and timeline |
With every change in raw materials, the same comparison is worth performing again.
THE FORMULA SETS THE DIRECTION
Mixing WPC and WPI? The product goal decides.
A protein blend can contain different whey qualities. Which ratio makes sense depends on the desired protein content of the finished product, the flavor profile, the preparation method, and the budget.
The same applies to special formats such as clear protein drinks: Any WPI 90 is not automatically suitable for every beverage concept; the specific raw material specification must match the application.
DIFFERENT STARTING POINT
Goat WPC expands your raw material concept.
For development using goat whey, we are first clarifying the specific quality in the range of 60 to 80 percent protein and the corresponding documentation. This will be followed by taste, preparation, and price level.
We do not derive any blanket statement regarding digestibility or quality from the origin alone.
YOUR PRODUCT GOAL
You provide the goal. We work with you to choose the right foundation.
Send us your existing specification or describe your requirements. If you are wavering between several qualities, we will start with your product goal and compare the options.
FAQ
Frequently asked questions about WPC, WPI, and whey raw materials
The most important classifications for raw material selection and the finished formula.
Is WPI automatically better than WPC?
It is a different category of raw material. Which quality is better suited to your product depends on the specification, the goal of the formula, the application, and the calculation.
Does a ready-made WPI shake always contain 90 percent protein?
No. The value of the raw material is not automatically the value of the finished mixture. Flavorings and other ingredients change the overall composition.
Is WPI generally lactose-free?
The category name alone is insufficient for this statement. For that, specific quality, the finished formulation, and labeling requirements must be examined.
Can I use WPC 80 Regular in a flavored blend?
This is checked based on the desired application. The processing and behavior of the finished mixture during the intended preparation are relevant.
Does Schneider Solutions produce the whey protein raw material itself?
We source our whey raw materials through our dairy contacts. Our services include coordinated raw material selection as well as development, blending, flavoring, and filling.
